The Hemp Shop Bakes; Dairy/Gluten Free Hemp Banana Blueberry Muffins

Ingredients
200g plain flour / coconut flour for gluten free option
100g brown sugar
100g white sugar
1tsp baking soda
1tsp baking powder
1/4tsp salt
1tsp cinnamon
1/4tsp nutmeg
50g Hempiness hemp protein powder
3 medium ripe bananas, mashed
¼ cup vegan buttermilk (¼ cup vegan milk and 1 lemon)
¼ cup vegetable or coconut oil
2tbsp maple syrup / or apple sauce
1tsp vanilla extract
2 ½ Hempiness tbsp shelled hemp seeds
Method
Heat oven to 170c and grease muffin tin
Squeeze 1 lemon into vegan milk and set aside to curdle to make the ‘vegan’ buttermilk
Sieve together plain flour, protein powder, salt, spices, baking soda, baking powder, spices and sugars into a bowl and add the hemp seeds
In another bowl combine the mashed bananas, vanilla extract, maple syrup and buttermilk
Fold the wet ingredients into the dry, then fold in the blueberries
Fill the muffin tin ⅔rds full, adding extra blueberries and hemp seeds on
Place in the oven and bake for 20-25mins, depending on the tin size / when a knife comes out clean
