The next stop in our new baking series ‘The Hemp Shop Bakes…’ is Gluten and Dairy Free Hemp Seed versions of the classic Peanut Butter Cookie
Who doesn’t love abit of Peanut Butter indulgence on a Monday, Tuesday, Wednesday.. everyday of the week sounds about right. Right?!
To celebrate our love of Peanut Butter we have created an original Gluten and Dairy Free Crunchy Hemp Seed Peanut Butter Cookie recipe for you to incorporate your love of Peanut Butter with some super nutritious Hemp Seed goodness!

Gluten & Dairy Free Crunchy Hemp Seed Peanut Butter Cookies
Ingredients;
225g Crunchy Peanut Butter
57g White Sugar
170g Soft Brown Sugar
1/2tsp Baking Soda
1tsp Vanilla
57g Shelled Hemp Seeds (you can purchase 250g here, 500g here, 1kg here, 2.5kg here)
1 Egg
Method;
– Preheat the oven to 170c
– Put all ingredients in one bowl
– Mix until just combined
– Chill for 30 mins to 1 hour in the mixing bowl
– Split into golf sized balls and press down into oval shapes
– Bake for 10 to 15mins
– Take out the oven and cool on a baking tray
*Top Hemp Baking Tip* Take them out of the oven when they still look underbaked so they’re nice and chewy when they cool down
Optional Decoration;
– Melt some dark choc in a glass bowl
– Dip the cookies to your hearts content!
– Finish off with a sprinkle of Hemp Seeds and a smattering of peanut bits
