A Vegan, Hemp friendly take on some classic comfort food

5 -7 tbsp Hemp Flour
3 Medium Sweet Potatoes, grated
OR 2 Courgettes
1 tsp ground coriander
1 tsp paprika
pinch of salt
1 Red Pepper, diced
50g Shelled Hemp Seeds
Small tin of Sweetcorn
Handful of Spinach
1 Red Onion, diced
1 Cup of Chickpea Water
Chop up some basil leaves, sprinkle on mpore Shelled Hmep Seeds for extra protein and we dipped ours in some balsamic vinegar!
Note. If you use courgette, squeeze the water out of them after you grate them before you begin.
Mix together the seeds and finely chopped veg in a bowl
Blend the flour, spices and salt in another bowl
Combine. Add 1/2 a cup of chickpea water and mix together. Keep adding tablespoons of chickpea water until the mixture is a nice thick, American pancake-like batter
Heat a little sunflower oil in a non stick frying pan until it’s quite hot
Turn the heat down to to medium. Take spoonfuls of mixture and push them into the pan, shape them into fritters with the back of the spoon and fry for about 3 minutes on each side until browning and crispy. Fry three of four at a time, depending on the size of your pan
Keep them warm in a low oven while you fry the remaining fritters.
